  • 1 cup all-purpose flour Whole wheat can be substituted.
  • 1 tsp baking powder Provides lift.
  • 1 tsp ground cinnamon Key flavoring.
  • ½ cup brown sugar Must be packed.
  • ½ cup maple syrup Adds sweetness and flavor.
  • ½ cup coconut oil, melted Can substitute with other oils.
  • 2 large eggs Acts as a binder.
  • 1 cup Greek yogurt Unflavored preferred.
  • 1 tsp vanilla extract Enhances flavor.
  • ½ cup chopped pecans or walnuts Optional, for crunch.
Icing
  • 1 cup powdered sugar Essential for icing.
  • 2 tbsp milk Adjust for consistency.
  • ½ tsp vanilla extract Adds flavor to icing.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish.
  2. In a large bowl, mix together the oats, flour, baking powder, cinnamon, and brown sugar.
  3. In another bowl, whisk together the maple syrup, melted coconut oil, eggs, Greek yogurt, and vanilla extract until smooth.
  4. Combine the wet and dry mixtures, being careful not to over mix.
  5. If using, fold in the chopped nuts.
  6. Spread the batter into the prepared baking dish.
Baking
  1. Bake for 20-25 minutes or until a toothpick comes out clean.
Icing
  1. Once cool, whisk together the powdered sugar, milk, and vanilla until smooth and drizzle over the bars.
