Ingredients
  

Wonton Filling
  • 200 g minced chicken or prawns
  • 1 pkg wonton wrappers Use round ones or cut spring roll wrappers.
  • 1 cup steamed vegetables Use any leftover steamed veggies.
  • 3 tbsp red curry paste Key flavor ingredient.
Soup Base
  • 1 can coconut milk Any brand is fine.
  • 2 cups chicken or vegetable stock Use leftover broth if available.
  • 1 tbsp fish sauce Essential for flavor.
  • 1 tbsp juice of lime Squeeze fresh if possible.
  • fresh coriander/cilantro For garnish.

Method
 

Preparation
  1. Preheat your oven and prepare the filling by combining minced chicken (or prawns), steamed vegetables, and 1 tablespoon of red curry paste in a bowl.
  2. Assemble your wontons by dabbing water on edges of a wrapper, adding a teaspoon of filling in the center, and folding it into a pocket.
Cooking
  1. In boiling water, cook wontons for about 3-4 minutes until they float.
  2. In a separate pot, combine coconut milk, stock, remaining curry paste, and fish sauce. Bring to a light simmer.
  3. Add the cooked wontons to the soup and simmer for another 5 minutes before serving.
