Ingredients
  

For the cookie base
  • 1 cup unsalted butter, softened Lurpak is my go-to.
  • 1 cup cream cheese, softened Philadelphia is preferred.
  • 1 cup granulated sugar Grab the Domino brand.
  • 1/2 cup brown sugar Provides caramel-like depth.
  • 2 pieces eggs Use any eggs you have.
  • 2 cups all-purpose flour If self-raising is grabbed by mistake, just roll with it.
  • 1 tsp vanilla extract Nielsen-Massey is recommended.
  • 1/2 tsp baking powder
  • 1/4 tsp salt Balances the sweetness.
For the mix-ins
  • 1 cup chopped fresh strawberries Fresh is best for flavor.
  • 1/2 cup white chocolate chips Optional, but highly recommended.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the softened butter and cream cheese until smooth.
  3. Add in the granulated sugar and brown sugar. Beat until creamy.
  4. Crack in the eggs one at a time, beating after each. Then drizzle in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture.
  7. Fold in the chopped strawberries and white chocolate chips.
  8. Using a tablespoon or an ice cream scoop, place the cookie dough on a prepared baking sheet lined with parchment paper.
Baking
  1. Bake in the preheated oven for 10-12 minutes until edges are lightly golden.
