Method
Preheat the Oven
- Preheat your oven to 200°C (or 400°F).
Prepare the Chicken and Veggies
- On a large sheet pan, toss the diced chicken, bell pepper, onion, and zucchini with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
Roast
- Pop the pan in the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through and veggies are tender.
Mix the Herby Ranch
- In a bowl, combine Greek yogurt, buttermilk, dill, parsley, garlic powder, and lime juice. Stir until combined.
Assemble the Pitas
- Once everything is done cooking, take the sheet pan out of the oven and let it cool for a few minutes. Fill each pita with the roasted chicken and veggies.
Drizzle with Herby Ranch
- Generously drizzle or dollop the Herby Ranch sauce over your filled pitas, then serve right away.
