Ingredients
  

Main Ingredients
  • 1 cup unsalted butter, softened I always go for the big tub because I can’t resist spreading it on everything.
  • 3/4 cup granulated sugar I buy the big bag and keep it in a sealed jar.
  • 3/4 cup brown sugar, packed The darker, the better for that gooey goodness.
  • 1 tsp vanilla extract Use whichever brand makes you happy.
  • 2 large eggs Fully expect to crack one on the floor; it’s a rite of passage.
  • 2 cups all-purpose flour I keep a bag handy at all times.
  • 1 tsp baking soda Check it hasn’t expired.
  • 1/2 tsp sea salt I love my Malden salt, but any will do.
  • 1 cup caramel candies, chopped Go for soft ones; life’s too short for hard caramels.
  • to taste extra sea salt for sprinkling This is where the magic happens.

Method
 

Step 1: Cream the Butters and Sugars
  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Stop mixing once the mixture is light and has a slightly silky texture.
Step 2: Add the Eggs and Vanilla
  1. Beat in the vanilla extract and eggs one at a time until fully combined.
Step 3: Combine the Dry Ingredients
  1. In a separate bowl, whisk together the flour, baking soda, and sea salt. Gradually add this to the wet ingredients.
Step 4: Fold in the Caramel
  1. Gently fold in the chopped caramel candies.
Step 5: Scoop the Cookies
  1. Use a cookie scoop or spoon to form balls of dough and place them on a lined baking sheet.
Step 6: Bake the Cookies
  1. Bake in a preheated oven at 350°F (about 175°C) for 10-12 minutes or until the edges turn golden brown.
Step 7: Sprinkle with Sea Salt
  1. As soon as the cookies come out of the oven, sprinkle a pinch of sea salt on each while still warm.
Step 8: Cool and Serve
  1. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

If you burn the bottom of your cookies, scrape off the burnt bits and enjoy the soft centers. You can also use chocolate chips if you're out of caramel candies.
