  • 1 cup granulated sugar Use less sugar if watching your waistline.
  • 2 large eggs Fresh from the local farmers’ market.
Dry Ingredients
  • 2.5 cups all-purpose flour Avoid measuring with a coffee cup.
  • 1 tsp baking soda Check expiration date for effectiveness.
  • 0.5 tsp salt Sea salt recommended for a fancy touch.
Mix-ins and Garnish
  • 1 cup chocolate chips Cadbury brand preferred.
  • 0.5 cup crushed pistachios Use more if you're a pistachio addict!

Method
 

Baking Preparation
  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, pistachio cream, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time.
Mix Dry Ingredients
  1. In another bowl, whisk together the flour, baking soda, and salt.
  2. Gradually add this mixture to the butter mixture and mix until just combined.
Add Mix-ins
  1. Gently fold in the chocolate chips and crushed pistachios.
Scoop and Bake
  1. Use a cookie scoop (or two spoons) to drop dough onto the prepared baking sheets, leaving space between each cookie.
  2. Bake in the preheated oven for about 10-12 minutes, or until the edges are slightly golden.
  3. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
