Ingredients
  

Cabbage and Filling
  • 1 large head cabbage Savoy is preferred for its sweetness, but any cabbage will work.
  • 2 cups quinoa, cooked A cheaper protein alternative with a lovely nutty flavor.
  • 1 cup carrots, grated Add extra for kids who love them.
  • 1 large onion, diced Chop small for quicker cooking and to be less noticeable to kids.
  • 3 cloves garlic, minced Add more if desired for extra flavor.
  • 1 tsp smoked paprika Elevates the flavor significantly.
  • 1 tsp salt & pepper Use sea salt for best results.
  • 2 eggs For binding the mixture.
  • ½ cup grated cheese Cheddar is recommended, as it's commonly available.
  • to taste herbs Any leftover fresh herbs can be added for freshness.

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Remove about 10-12 leaves from the cabbage head. Cut the core for easier removal.
  3. In a large pan, heat a splash of olive oil over medium heat. Add the diced onion and garlic; sauté for 5 minutes until soft.
Filling and Assembly
  1. In a bowl, combine the cooked quinoa, grated carrots, sautéed onion and garlic, smoked paprika, eggs, cheese, and salt and pepper.
  2. Take a cabbage leaf, spoon some filling into the center, fold the sides over, and roll it up like a burrito.
Baking
  1. Place the rolls seam-side down on a parchment-lined baking sheet. Brush the tops with olive oil.
  2. Bake in the preheated oven for 25-30 minutes, or until golden brown.
