Method
 

Preparation
  1. Preheat your oven to 220°C (428°F).
  2. Lightly flour your surface and roll out the pizza dough to about 0.5 cm thick.
  3. Transfer the rolled dough to a baking tray lined with parchment paper and poke holes in the base to prevent bubbling.
Assembling the Pizza
  1. Spread the ricotta cheese evenly across the dough, leaving a small border around the edges.
  2. Sprinkle the lemon zest evenly and drizzle with olive oil. Season with salt and pepper.
  3. Top with shredded mozzarella.
Baking
  1. Pop the pizza in the oven for about 12-15 minutes, or until the edges are golden brown.
Finishing Touches
  1. Once out of the oven, scatter fresh basil leaves on top and drizzle with a bit more olive oil.
