Ingredients
  

For the Pastry
  • 1 pack puff pastry (store-bought) Use frozen for convenience.
For the Filling
  • 2 cups shredded cheddar cheese Use mature cheddar for more flavor.
  • 1 package cream cheese, softened Microwave for 10 seconds if lumpy.
  • 2 jalapenos, diced (seeds removed) Leave some seeds in for extra heat if desired.
  • 1 tsp garlic powder Adds great aroma.
  • 1 large egg, beaten For egg wash to give a golden color.
  • optional fresh cilantro, chopped For garnish.

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. On a floured surface, roll out the puff pastry until it's about 1/4 inch thick.
  3. In a bowl, combine cream cheese, shredded cheddar, garlic powder, and diced jalapenos to create the filling.
  4. Use a pizza cutter to slice the puff pastry into rectangles, about 10 cm by 5 cm.
  5. Place a spoonful of the filling onto each pastry rectangle and fold over to seal.
  6. Brush the tops with beaten egg for a golden finish.
  7. Bake in the preheated oven for about 25 minutes or until golden brown.
