Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour Whole wheat also works as a substitute.
  • 1 tablespoon baking powder This is the magic ingredient that makes them fluffy.
  • ¼ teaspoon salt Enhances all the flavors.
Wet Ingredients
  • ½ cup milk Semi-skimmed or any milk works just fine.
  • 2 large eggs Substitute with 3 small eggs if needed.
  • 1 cup cooked sausage, crumbled Use local butcher sausages or frozen, whichever is available.
  • 1 tablespoon maple syrup Just a hint of sweetness.
  • Optional: diced veggies (like bell peppers or onions) Choose based on your preference.

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Grease your muffin tin with non-stick spray or a bit of butter.
Mixing
  1. In a bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, whisk the milk and eggs together, then stir in the maple syrup and crumbled sausage.
  3. Pour the sausage mixture into the dry ingredients and mix gently.
Baking
  1. Spoon the mixture into the muffin cups, filling each about halfway.
  2. Bake for about 18-20 minutes, or until golden brown and a toothpick comes out clean.
Serving
  1. Once out of the oven, let them cool for a minute before serving warm, optionally with Greek yoghurt or extra maple syrup.

Notes
