Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9x5 loaf pan with butter or non-stick spray.
Mixing Dry Ingredients
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Mixing Wet Ingredients
- In a large bowl, combine Greek yogurt, honey (or syrup), eggs, vanilla, lemon zest, and juice.
Combining Mixtures
- Gently add the dry ingredients to the wet mixture and mix until just combined.
Baking
- Transfer the batter to the greased loaf pan.
- Fold in blueberries or poppy seeds if using.
- Bake in the oven for about 50-60 minutes or until a toothpick comes out clean.
Cooling and Serving
- Let the cake cool in the pan for about 15 minutes, then transfer it to a wire rack to finish cooling.
- Serve with icing sugar or a dollop of Greek yogurt on top.

Notes
If you burn the bottom, you can slice it off. If you don't have Greek yogurt, sour cream or buttermilk can work too. The leftovers taste better the next day!
