  • 0.5 cups unsweetened applesauce Helps reduce calories.
  • 0.5 tsp vanilla extract For aroma.

  • 0.5 cups dark chocolate chips Essential for the chocolatey taste.
  • 1 handful nuts or seeds Optional for added crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a bowl, combine the flour, oats, coconut sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together Greek yogurt, eggs, applesauce, and vanilla.
  4. Gradually fold the wet ingredients into the dry until just combined.
  5. Gently fold in the chocolate chips and any nuts or seeds if using.
  6. Evenly distribute the batter into the muffin tin, filling each cup about ¾ full.
Baking
  1. Bake the muffins for 18-20 minutes or until golden brown.
  2. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack.
