Preparation
- Preheat the oven to 175°C (350°F).
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Add in the melted coconut oil, honey, egg, and vanilla extract to the mashed bananas. Whisk until thoroughly combined.
- Sprinkle the baking soda and salt over the wet mixture. Then, add the flour and gently mix until just combined.
- Fold in the nuts and/or chocolate chips, if using.
- Pour the batter into a greased loaf pan.
Baking
- Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
