  • 1 lb ground beef (lean) Can substitute with ground turkey or leftover roast chicken.
  • 4 medium potatoes, diced Russet potatoes preferred; avoid overly waxy types.
  • 1 large onion, chopped Flavor is key; don't skip this ingredient.
  • 2 cups mixed vegetables Frozen mixed vegetables work great.
  • 1 can (10.5 oz) cream of mushroom soup Using Campbell’s brand is recommended.
  • 1 cup beef broth Homemade is best but store-bought works.
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Optional: shredded cheese for topping Adds extra comfort to the dish.

Method
 

Preparation
  1. In a skillet, brown the ground beef over medium heat until cooked through. Drain any excess fat.
  2. Add the browned beef to your Crockpot along with diced potatoes, mixed vegetables, chopped onion, cream of mushroom soup, beef broth, garlic powder, salt, and pepper.
Cooking
  1. Give everything a good stir, set the Crockpot on low, and let it cook for 6 to 8 hours.
  2. About 15-30 minutes before serving, add shredded cheese on top and cover to let it melt.

Notes
