Ingredients
  

Main Ingredients
  • 1 cup dried chickpeas Soak overnight in water, or use 2 cans of chickpeas, rinsed.
  • 1 small onion, diced A yellow onion is recommended.
  • 3 cloves garlic, minced Add an extra clove if desired.
  • 1/4 cup fresh parsley, chopped Adds a lovely fresh taste.
  • 1/4 cup fresh coriander, chopped Also known as cilantro.
  • 1 tsp ground cumin Adds needed spice.
  • 1 tsp ground coriander Another complementary spice.
  • 1 tsp baking powder Prevents falafel from being too dense.
  • to taste salt and pepper Enhances flavor.
  • 1 tbsp olive oil or cooking spray For air frying.
  • tahini for serving Essential for serving with falafel.

Method
 

Preparation
  1. Rinse the dried chickpeas and place them in a bowl with water, letting them soak overnight.
  2. If you're short on time, quick soak by putting them in boiling water for an hour.
Blending
  1. Drain the chickpeas and add them to a food processor with onion, garlic, parsley, coriander, spices, baking powder, salt, and pepper. Blend until combined, but do not make a paste.
Forming the Falafel
  1. Use your hands to form the mixture into small balls, about the size of a golf ball, or flat patties if you prefer.
Heating
  1. Preheat the air fryer to 375°F (190°C).
Cooking
  1. Place your falafel balls in the air fryer basket in a single layer, lightly spray with oil, and air fry for about 12-15 minutes or until golden brown, flipping halfway through.
Cooling
  1. Remove falafel from the fryer and let them cool on a rack for about five minutes.

Notes

Leftovers taste even better the next day; reheat in the air fryer for a few minutes to regain crunch. If the mixture is too runny, add a spoon of flour or breadcrumbs.
