Ingredients
  

Chicken and Marinade
  • 4 pieces chicken breasts, skinless and boneless Organic if possible.
  • 2 pieces limes, juiced Fresh lime juice gives the best flavor.
  • 1 tbsp chili powder Smoked chili powder adds depth of flavor.
  • 2 cloves garlic, minced Add more for extra flavor if desired.
  • 2 tbsp olive oil Use a good quality olive oil.
  • 1 tsp salt Sea salt preferred.
Garnishing Ingredients
  • 1 handful fresh cilantro, chopped Optional, for garnish.

Method
 

Prepare the Marinade
  1. In a large bowl, mix lime juice, chili powder, minced garlic, olive oil, and salt together. Make sure the garlic is well incorporated.
Marinate the Chicken
  1. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour.
Cook the Chicken
  1. Heat a skillet over medium heat and add a splash of olive oil. Once hot, add the chicken breasts.
Flip and Finish
  1. Cook the chicken until the first side is golden brown, then flip and cook for another 6-8 minutes until fully cooked.
Garnish and Serve
  1. Let the chicken rest for 5 minutes before slicing. Garnish with chopped cilantro and an extra squeeze of lime juice before serving.

Notes
