Ingredients
  

Filling Ingredients
  • 500 g chicken breast, cooked and shredded Leftover roast chicken works great.
  • 300 g cream cheese Full-fat recommended for creaminess.
  • 1 cup grated cheese Cheddar is a great choice.
  • 2 tbsp fresh chives, chopped Optional; skip if not a fan.
  • 1 packet puff pastry Jus-Rol recommended.
  • 1 egg beaten For brushing on top.
  • Salt & pepper to taste Use freshly cracked pepper.
  • Optional: garlic powder or onion powder For additional flavor.

Method
 

Preparation
  1. In a bowl, combine the shredded chicken, cream cheese, grated cheese, and chives. Mix well, and season with salt and pepper.
Rolling Out the Pastry
  1. On a floured surface, roll out the puff pastry until it's about 5mm thick.
Cutting and Filling
  1. Cut the pastry into squares, about 10cm by 10cm, and place a spoonful of filling in the centre of each square.
Folding and Sealing
  1. Fold each square over to form a triangle, pressing the edges firmly to seal. You can use a fork to crimp the edges for a decorative touch.
Brushing and Baking
  1. Place the pillows on a baking tray lined with parchment paper. Brush the tops with the beaten egg.
  2. Bake in the preheated oven until golden brown and cooked through.
