  • 2 medium zucchini, grated Green zucchini is easier to find, but yellow works too.
  • 1 teaspoon salt Sea salt is preferred.
  • 1 cup shredded mozzarella cheese For maximum gooeyness.
  • 1/2 cup grated Parmesan cheese Essential for flavor.
  • 1/2 cup all-purpose flour Wholemeal can be used for a healthier option.
  • 2 large eggs Free-range for best flavor.
  • 1 teaspoon garlic powder Adds great flavor.
  • 1/2 teaspoon black pepper Adjust to taste.
  • optional Fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Grate the zucchini using a box grater or food processor.
  2. Squeeze the grated zucchini to remove excess water.
  3. In a mixing bowl, combine the grated zucchini, salt, mozzarella, Parmesan, flour, eggs, garlic powder, and black pepper until well incorporated.
  4. Spread the mixture onto a parchment-lined baking sheet, shaping it into a rectangle about 1/2 inch thick.
  5. Preheat the oven to 200°C (400°F) and bake for about 20 minutes, or until the top is golden and bubbly.
  6. Allow to cool for at least 5 minutes before cutting into sticks.
  7. Serve warm with your favorite marinara sauce for dipping.

Notes
