  • 1 medium onion, diced Yellow onions are cheaper.
  • 3 stalks bok choy, chopped Alternatives include spinach or kale.
  • 2 medium carrots, sliced Add an extra for good measure.
  • 1 teaspoon ginger, grated Adds a nice kick.
  • to taste salt and pepper Sea salt is preferred.
  • to taste red pepper flakes Optional, based on spice preference.

Method
 

Cooking
  1. Heat the olive oil in a pan over medium heat.
  2. Add garlic and onion, sautéing until fragrant.
  3. Toss in the chicken pieces and cook until lightly browned.
  4. Add in the carrots and ginger, letting it mingle.
  5. Pour in the chicken stock and bring to a simmer.
  6. Finally, add the bok choy and season to your liking.
